So, obviously, you need a waffle iron to make these delicious waffles, but I’m pretty sure they can also be baked in the oven in a silicone waffle mold.
For the ingredients, you need coconut flour, psyllium husk powder (yes, fine powder), organic eggs, freshly grated Parmesan, and heavy cream. And naturally, a generous amount of butter for frying.
Even though this recipe needs some whipping, it’s fairly simple and definitely worth the little effort. You’ll be glad you did that once you taste the first bite of these delectable waffles!

Combine 1/3 cup (80 ml) coconut flour…

How I came up with this savory keto waffle recipe
After creating recipes for Keto Spinach Waffles and Fluffy Keto Pumpkin Spice Waffles, I have been in a sort of waffle mood.
Creating waffle recipes is really gratifying as you are rewarded with a satisfying and tasty result. I was mainly creating the ultimate keto waffle recipe with our Ketokamu baking mix, and after succeeding with it, I decided to further pursue my keto waffle experiments, this time with cheesy waffles.
Well, the thing is that I had written only “Fluffy and Cheesy Waffles” on my idea list, but no further info. So, I started my ideation quite from scratch, beginning with the flours and ending up thinking about how to make the waffles as fluffy as possible.
For starters, I decided to use coconut flour and psyllium husk powder as flour. My initial thought was almond flour, but I soon dropped the idea because so many people nowadays avoid almond flour due to its high oxalate content. Moreover, coconut flour would be perfect for those with a tree nut allergy.
I also knew I needed eggs to bind my waffles and some liquid — like heavy cream. To get a really fluffy result, I decided to beat the egg whites until stiff peaks and also the heavy cream until stiff. That should make really fluffy and melt-in-the-mouth waffles, I contemplated.
For the cheese, I opted for Parmesan as it’s tasty and sharp. Relatively finely grated Parmesan would divide into the batter and lend taste all over, I hoped.
After coming up with the measures, I was ready to conduct my first experiment and shoot the photos.
My preparations went well, but I was a tad horrified when the batter turned out much thicker than I had thought. However, in the end, it was just perfect as the result indeed was even better than I had hoped: melt-in-the-mouth and tasty waffles which were so fluffy that they were like the softest pillow! Plus, the waffles looked adorable and so perfect. Oh, mine, what a real pleasure for all senses!

Tips for Variations and for Serving
Instead of Parmesan, you can use any sharp cheese variety you like. My personal favorites are Swiss cheese, sharp cheddar, Manchego, and Gruyère, although I bet aged gouda and provolone would also be suitable alternatives.
If almond flour is your go-to keto flour, you can certainly use it in this recipe. Replace the coconut flour with 1 cup (240 ml) of almond flour.
For more flavor, add 1 teaspoon of dried herbs, like thyme, rosemary, mint, dill, or sage. Italian herb mix or Herbes de Provence are also tasty and elegant seasonings. Good old onion powder and garlic powder work wonders as natural flavor enhancers.

This week, I was traveling in stunningly beautiful Prague. The weather was sunny and quite cold; the temperatures were approximately the same as in Finland. I went to a nice classical music concert in a gorgeous old church. It was lovely to hear some of the most well-known classics, like Schubert’s Ave Maria, Bach’s Toccata and Fugue in D minor, Beethoven’s Symphony No. 5, Opus 67 – I. Allegro con brio, and part of Vivaldi’s Four Seasons.

Czechs do love their beer and sausages…
…but the old town was full of stalls that made and sold chimney cakes (in Czech: trdelník), a certain kind of spit cake. Chimney cake is a traditional old Bohemian sweet pastry made of yeast dough. They are made from rolled dough wrapped around a stick and baked over hot coals. Baked trdelnik is coated in sugar mixed with cinnamon or nuts. And finally, they were filled with various sweet fillings, often with soft ice and chocolate sauce. Naturally, I didn’t try any because they were wheaty and sugary — but I’m certainly going to make a keto version pretty soon!
