Here is my favorite summertime drink. Most probably this is a combination of something old, something new, something borrowed and something — well, not blue but pale yellow. All told, it’s simple and wonderfully refreshing in a hot summer day — or night. The weather has been pretty warm for a couple of weeks, so I have had a good reason to gulp down these and fine-tune and test the recipe.

When making experiments with my 1-2-3 Bread I once brushed the loaf generously with extra virgin olive oil, and sprinkled with unrefined sea salt. The crust was crunchy and deliciously salty. That gave me an idea to try out crackers with the same method — almond flour and eggs, brushed with extra virgin olive oil and sprinkled salt on top.
After few attempts I found the best ratio between almond flour and eggs. Then adding olive oil and salt wasn’t much of rocket science. The result: simple but delicious, very very addictive crackers. Easy to modify as well, of course.

My husband likes chicken. One of his favorite dishes is chicken curry with vegetables. I’ve made it so many times that this time I wanted to try something different. Something juicy with a subtle bite. When thinking of juicy, orange with its gentle fruitiness goes perfectly with chicken. A piquant touch of ginger gives the bite. I wanted to tie the flavors with something creamy, and sour cream seemed to work well giving its freshly sour note. My husband loved the dish and encouraged me to publish the recipe. I don’t remember how many experiments were needed that I was satisfied with this recipe. I just can say many, and maybe some more. All I wanted was a really simple recipe for easy gluten-free low-carb bread made from ingredients you can find from almost every grocery store, or at least every health food store. A bread, which is easy to vary and makes a nice base for sweet and savory toppings alike.
Finding the best ratio between these simplest ingredients took looong time. Luckily my toddler and my husband loved most of the results, so did my parents whenever they happened to visit us and I was in the mood for baking (well, I’m always in the mood for baking…) I bet you’ll like this simpler than simple recipe, so enjoy!

Last week I was fancying rich and creamy pudding. Vanilla pudding would have been too — well, vanilla. Chocolate pudding could have been a nice option, but I wanted something a bit more full-flavored so I ended up with mocha pudding. I had never made lemon curd before since I’m not that big fan of lemon flavor. The idea of simple low-carb lemon curd was however so tempting, that I wanted to try and develop it. Many lemon curd recipes are quite complicated. Separating eggs, grating some lemon zest, melting the butter, using a double boiler, … I wanted something simple and easy. I think I reached my goal, at least I immediately fell in love with this low-carb lemon curd and I wasn’t even a fan of lemon flavor before! I hope you like it as well.

This easy to make, refreshing sugar-free strawberry ice cream was developed in a chilling winter day — not what you would immediately expect for a cooling delicacy like this. However, I had some frozen strawberries from last summer and wanted to use them. I also had some coconut milk and got an idea to add thick Greek yogurt for giving a bit more refreshing touch and to thicken the consistency.

You need just three ingredients: frozen raspberries, ricotta and vanilla stevia.

This smooth and velvety, creamy and buttery low-carb icing is perfect for cakes and cupcakes. It’s something between buttercream and cream cheese icing. Not a compromise, but a sweet marriage of cream cheese and butter. I developed this icing especially for my Fluffy Little Lemon Thingies. Just quickly spread it or pipe beautiful decorations — it suits perfectly both.
