You’ll need heavy cream (or coconut cream if you don’t tolerate dairy), pureed blackcurrants (fresh or frozen and thawed), sweetener (I recommend allulose, although powdered erythritol will do), freshly squeezed lemon juice, and gelatin powder.
To make these gummies, you’ll just heat all ingredients in a saucepan until the gelatin is dissolved, pour into silicone molds (the fancier mold, the better), and let set for a couple of hours. That’s it!
Step-by-Step Instructions on How to Make these Keto Candies
So, without further ado, let’s take a step-by-step look at how to make these crazy-good gummies:

How I Came up with this Easy and Flavorful Keto Treat Recipe
The Idea
A few months ago, one of my readers asked for a recipe for blackcurrant gummies. Based on my existing fruity gummy recipes, I threw her a guestimation of needed ingredients and their amounts.
I’ve learned the hard way that the base for keto gummies has to be extra flavorful and super acidic for the candies to have any taste. Last week, it occurred to me that blackcurrant gummies would be a great recipe to post here on my blog. The brisk flavor of blackcurrant just shouts, “Summer!” On the other hand, I wanted something creamy and was pondering over creamy raspberry gummies.
Then, I realized I could make super delicious gummies combining blackcurrants and cream! Oh, that sounded like a divine combination of tart fruitiness (or should I say “berriness”) and mellow creaminess!
I quickly took a handful of thawed blackcurrants, pureed them with an immersion blender, and without thinking too much — or actually, I relied on the knowledge from my previous gummy experiments — combined the blackcurrant puree, heavy cream, some lemon juice, a good amount of powdered erythritol, and gelatin powder in a saucepan, heated until melted and poured into silicone molds and placed in the fridge.
About Silicone Molds
I have a huge collection of various silicone molds. Always when I see a fancy mold, I buy it without hesitation. My preferred brand is an Italian brand called Silikomart. They have an enormous selection of the fanciest — but also very classic — molds for every occasion.
For these gummies, I used this fascinating mold and also a ball-shaped mold. Amazon US doesn’t seem to carry that ball-shaped mold, but this one comes closest. A few gummies ended up in a classic heart-shaped mold also from Silikomart.
The Result
After waiting a few hours, I grabbed the molds from the fridge and started examining my creations. I removed one heart-shaped gummy from the mold, and I was astonished by its beautiful and bright color — with only natural ingredients!
Naturally, I had to taste the treat immediately. Oh, what a burst of flavor it was! Tangy blackcurrant with a splash of lemon juice was an amazing contrast to the rich and mellow heavy cream.
Also, the consistency and the texture were ultimately palate-pleasing. I — and my teeth — love these candies! Just try them; I bet your tastebuds will also make a happy dance once you pop one candy in your mouth!

Tips for Making the Gummies
Use a silicone gummy mold or chocolate mold to create uniform gummies. This will make measuring the ingredients easier and ensure that each gummy is the same size and shape.
Ensure the gelatin is fully dissolved in the hot mixture before pouring it into the molds. This will help prevent any lumps or clumps in the gummies.
For the cream, you can use heavy cream or coconut cream. Coconut cream will give the gummies a slightly tropical flavor, while heavy cream will give them a richer, creamier taste.
Instead of powdered erythritol or allulose, feel free to use another calorie-free natural sweetener such as stevia of monk fruit.
If you prefer a sweeter gummy, add some keto-friendly sweetener such as allulose, powdered erythritol, monk fruit, or stevia. Be sure to adjust the amount of sweetener based on your taste preferences. Using a combination of sweeteners brings the best out of them while the side taste and the aftertaste are masked by another sweetener.
To add a little extra texture to the gummies, sprinkle unsweetened desiccated coconut on top of the candies before refrigerating them.
Variations
Instead of blackcurrant, you can use other berries such as raspberries (my favorite!), blueberries, strawberries, or blackberries. You can also mix and match different berry flavors for a more complex taste.
Did you know that peaches have approximately the same carb count as strawberries? So, for indulgent peaches and cream gummies, replace the blackcurrant puree with peach puree!
For a more tropical flavor, you can use pineapple or mango juice instead of blackcurrant juice. You can also add a little lime juice or peel for a citrusy twist. Even those juices are super sweet, the carb count of one candy is pretty low. Naturally, if you avoid all fruits, simply ignore this variation!
To make the gummies more festive, you can make layered gummies with a cream layer and a blackcurrant layer. In that case, make the mixtures separately. Fill the silicone molds half full with one mixture, let set in the fridge, and fill with another mixture. Let set completely before removing from the molds.
To add a little extra flavor, you can mix in some vanilla extract or almond flavoring. This will give the gummies a subtle, sweet flavor that complements fruity and creamy flavors.
For a more adult version of the gummies, add a little (blackcurrant) vodka or rum to the mixture. This will give the gummies a boozy kick and make them perfect for parties or special occasions.
General Prattling

Can I ask what brand of powdered gelatin you use? 4 tbsp did not produce a good texture for me, and the second attempt with 4 tsp was MUCH more palatable.

I use Great Lakes. Be sure that the gelatin is not hydrolyzed, otherwise it won’t thicken.
