What is Soufflé
A traditional soufflé is a baked dish made with a base of egg yolks and various other ingredients, such as cheese, seafood, fruit, or vegetables, that are combined with beaten egg whites to create a light and fluffy texture. The word “soufflé” comes from the French verb “souffler,” which means “to blow,” “to breathe,” “to inflate,” or “to puff.”
Soufflés can be served as a savory main dish or sweetened as a dessert, and they are often served immediately after baking, as they tend to deflate quickly.
What is This Microwave Soufflé About?
Well, some might say that it’s unorthodox to make soufflé in a microwave oven. They probably raise their voices even further when I tell them you don’t need to separate the eggs and beat the egg whites.
Indeed, to prepare this microwave soufflé, you just combine all ingredients (eggs, cheese, cream/water, salt, and seasonings) and bake in a microwave oven until just done.
But why on earth do I call this recipe soufflé and not just omelet? Simply because the texture is fluffier than an omelet. Plus, you make the soufflé in a ramekin, not on a plate like a regular microwave omelet.
How to Make this Single Serve Keto Microwave Cheese and Egg Soufflé?
As you now know the ingredients and the method (just combine all ingredients and nuke), let’s simply take a step-by-step look at how to prepare this easy and satisfying meal for one.
First, combine 2 organic free-range eggs in a microwave-safe bowl.
Add 1/3 cup (80 ml) shredded sharp cheese like Swiss cheese (recommended) or Cheddar.
Add also 2 tablespoons of heavy cream or water…
…and a pinch of unrefined sea salt. You can add other spices like ground white pepper (which is lower in antinutrients like oxalates compared to black pepper), but I want to keep things simple here and season the dish with just salt.
Stir with a fork…
…until well combined.
Place in the microwave oven.
Bake on high for about 90 seconds…
…or until the soufflé starts rising.
Remove from the microwave oven.
Serve hot.
So tasty!
How I Came up with This Zero-Carb Meal Recipe
I was about to post a sweet recipe this week, but as I have now posted carnivore meal recipes, I decided to continue with them. I threw ideas into a text file and found that a single-serve cheese soufflé in the microwave oven would be just a perfect and satisfying dish for my busy week.
As usual, I decided to cut corners and just mix all ingredients — i.e., eggs, cheese, and cream plus salt — and cook in a microwave oven until fluffy. Normally, you’ll beat the egg whites for a soufflé, but this was supposed to be a super-quick meal, so I didn’t want to spend more time than what was absolutely needed.
I have greatly reduced my spice and seasoning intake, so I decided to use only unrefined sea salt as seasoning. For a moment, I thought ground white pepper would lend a nice kick, but I decided not to use it myself but just give it as a recommendation. White pepper is lower in antinutrients than the more common black pepper, so that is my recommendation — if you want to use any further seasonings, that is.
My first experiment turned out fabulous, but I realized that with only 1 egg, 2 tablespoons shredded cheese, and 1 tablespoon heavy cream, the meal was too little, so I doubled the ingredients, and now, I was super happy with the result. Enough cheese was another key to a successful and satisfying microwave soufflé.

Tips for Variations
You can jazz up this single-serving soufflé in many ways. Here are some suggestions:
- Spinach and Feta Soufflé: Add 1/4 cup (60 ml) of chopped, cooked spinach and 1/4 cup (60 ml) of crumbled feta cheese to the egg mixture before microwaving.
- Mushroom and Swiss Soufflé: Sauté some sliced mushrooms in butter until tender, then add them to the egg mixture along with the Swiss cheese.
- Bacon and Cheddar Soufflé: Crumble a few slices of cooked bacon and mix them with shredded Cheddar cheese before adding them to the egg mixture.
- Ham and Gruyere Soufflé: Dice some cooked ham and use Gruyere cheese. Add them to the egg mixture before microwaving.
- Broccoli and Cheddar Soufflé: Steam 1/3 cup (80 ml) of chopped broccoli until tender, then mix it with shredded Cheddar cheese and add it to the egg mixture.
- Tomato and Mozzarella Soufflé: Dice 1 small fresh tomato and use shredded mozzarella cheese. Add them to the egg mixture and bake as directed. Basil is the best herb with tomato and mozzarella, so make sure to sprinkle chopped fresh basil on top of your soufflé right before serving.
- Asparagus and Parmesan Soufflé: Steam some asparagus until tender, and chop it into small pieces. Use Parmesan cheese. Add the cooked asparagus and grated Parmesan to the egg mixture.
- Jalapeño and Pepper Jack Soufflé: Finely chop some jalapeño peppers and mix them with shredded pepper jack cheese before adding them to the egg mixture.
Note: Adjust the cooking time in the microwave based on the variations you choose.

FAQ
Can you really make soufflé in a microwave oven?
Yes, you can — this recipe shows exactly how. That said, the result won’t be as fluffy as the traditional soufflé that is made from separated eggs and baked in the regular oven. This solution here is a quick and dirty solution for a satisfying recipe that is ready in a couple of minutes. This soufflé will deflate a bit no matter what, so you’d better be prepared for that. The purpose of this recipe is to serve busy people and provide them with a tasty, nutritious, and super-quick meal.
How can you make a really fluffy soufflé?
If you want to turn this recipe into more like a traditional fluffy soufflé, I recommend separating the yolks and the whites and beating the whites until stiff peaks form. To retain its fluffiness, you must also bake your soufflé in a regular oven. Use 375 °F (190 °C) and bake the soufflé for about half an hour, or until high and fluffy.
How long does it take to cook a microwave cheese and egg soufflé for one?
Without add-ons or tweaks, the basic recipe takes about 90 seconds when baked on high. However, be sure to adjust the baking time according to your own microwave.
Can you customize the flavors in this recipe?
Absolutely! The easiest tweak is to use your favorite cheese. I recommend using sharp cheese to get enough flavor for this soufflé. Feel free to add your favorite herbs, spices, and seasonings. Be sure to check also the Tips for Variations section above for further ideas.
Are there any tips or tricks for achieving the perfect texture in a microwave cheese and egg soufflé for one?
The most important thing is not to overbake your soufflé. You’d rather want it a bit raw than too done, as it easily turns dry and rubbery if baked too long. Other than that, there are no other tips or tricks, but the recipe is pretty fool-proof and straightforward.
How is the texture of a soufflé prepared in a microwave?
The texture of a microwave soufflé is denser than a traditional soufflé as the eggs are not separated or beaten until fluffy.
Can I make multiple servings of the Microwave Cheese and Egg Soufflé at once?
I don’t recommend that, as a microwave oven is not capable of baking more servings at once. If you want to prepare several servings at once, use a regular oven (375 °F = 190 °C for about 30 minutes).
Can I substitute the eggs for another ingredient in the recipe?
No, that won’t work. Eggs are the main ingredient in this recipe, and no substitution gives a satisfactory result.

This week has been exciting. I have been working on my clean keto online store, which I’m going to open next week. Funnily enough, I already got one order even though the store is not officially open yet, and I haven’t advertised it.
Here’s the first order packed and ready to be sent. By now, the happy customer should have received her order.
We drove to our summer house with my son and mom for the rest of the week. I have been posting many Instagram stories about the Finnish summer house life. I’ve been picking berries and mushrooms, and we also caught crayfish. Wild nature is now full of delicious food.

This sounds so good! What is the wattage of your microwave? That makes a difference in timing on a “delicate” dish! Thanks!

Hi April, my microwave is 800 W. Hope you like the recipe!
April
Thanks! Mine is 1000 watt so that makes a difference! I’ll probably lower the wattage instead of making it less time.

That sounds like a good idea!
