Low-Carb “Limoncello” Mousse
Limoncello is famous Italian liqueur. As a typical liqueur it contains plenty of sugar and is thus not suitable for a very low-carb lifestyle. Therefore, I developed a quick, sugar-free low-carb “Limoncello”, which is used for seasoning this airy dessert mousse.
First, the grated, yellow lemon peel is steeped in vodka at least for overnight. The fluid is then carefully pressed through a strainer and added to a mixture of mascarpone and sweetener. The dessert is finally lightened with beaten egg whites, which round the flavors and make the texture as airy and fluffy mousse.
This adult-only dessert is great for any New Year’s Eve party. The whole family dessert can be made by substituting lemon juice for vodka.

Low-Carb Eggnog
As I’ve got a nasty flu, it has been the easiest for me to consume my food in liquid form. And that was a really good excuse to develop a recipe for low-carb eggnog! Smooth, creamy, velvety, nourishing and you can add there some rum for soothing a sore throat or just to get in the holiday mood!
Update 19th November 2014: I just learnt that the “Half-and-Half” used in the US contains all kinds of food additives. Please do yourself a favor and never use that kind of junk! What I mean here with half-and-half is simpy light cream with fat content of some 10%-12%. If you cannot find light cream (half cream in UK), just use half heavy cream and half milk. You can even try unsweetened almond milk or coconut milk to keep the carb count to the minimum.

Sesame Mirin Kale Chips (Vegan)
Here is a new twist on an old favorite: kale chips. As naturally low-carb, they are tasty and healthy and can be varied in numerous ways. My variation is tangy, yet slightly sweet savory treat spotted with delicious and nutritious sesame seeds.
Have these kale chips as snack or appetizer, munch them while watching a game or movie. Or crush them and sprinkle on soups and salads to give piquant flavor and crunchy texture.

DIY Diet Dr Pepper
I invented this homemade Dr Pepper in need of a healthy alternative to Diet Dr Pepper. After checking the ingredient list of a can of Diet Dr Pepper I was wondering if there are any healthy ways to make it myself. It was surprisingly easy and simple to develop, the flavor became great and authentic by itself. Now I can have a healthy alternative whenever I want! Even better, the drink consists of a mere 3 ingredients!
Update 21st October 2013:Frontier Natural Products have changed the flavor and the color of the cherry flavor because they wanted to get rid of the possible GMO-suspect ingredients. That’s a great thing as such, but as a consequence this drink doesn’t taste exactly like Dr Pepper anymore. Well, the drink still tastes good, just not exactly like Dr Pepper.

Low-Carb Marshmallow Fluff Frosting
Marshmallow fluff is not the easiest thing to convert into low-carb. Commercial sugar-laden versions have high-fructose corn syrup as main ingredient — which is really bad, bad, bad. And sticky. With low-carb ingredients you cannot get that sticky result, at least not easily. But since I’m not in favor of stickiness, I created this yummy airy, fluffy frosting as healthier low-carb alternative to fill and frost your baked goods.
