Is it possible for a recipe to be too easy? Don’t let the simplicity of this one turn you off. Even though these keto brownies contain just 4 ingredients and are super-simple to make, they might just be the best ever brownies you’ve ever eaten!
These peanut butter brownies are just perfect: fudgy on the inside (if you don’t bake them too long, that is!) and crispy outside. Especially the peanut butter swirl on top: it almost has the consistency of a crunchy peanut butter cookie! And with less than 3 grams net carbs per serving, these brownies are ideal if you’re following a keto diet.

I’ve done lots of keto mug bread experiments. I posted one recipe, which was pretty close to this one, on Facebook a couple of years ago. But that recipe contained flaxseed, which I don’t use anymore because there are so many problems with it (see below!), so I use chia seeds in this recipe instead. They lend a delicious crunch to this easy-to-make 90-second keto bread.

Have you noticed that most low-carb recipes are designed for a whole family? With enormous batches, and boldly boasting that “the whole family will like this!”? But why doesn’t anybody think of single people? It’s very seldom that a whole family follows a low-carb or ketogenic diet. And if you want a snack, you won’t want to bake a whole batch of something, anyway. You want a single serving of something quick. Sound familiar? If so, then, this Chocolate Mud Cake in a Mug is a life-saver!
Originally, I posted this recipe on my Facebook page in September 2015. However, as it used to be a staple in our house — and got big love on the Facebook page when I posted it — I thought it deserved a whole blog post of its own. This is one of the simplest, chocolatiest and most delicious recipes I’ve ever seen for a low-carb chocolate mug cake. I bet you’ll agree!

Is there such a thing as easy, healthy, tasty pizza? Yes, there is! This recipe lets you satisfy your pizza cravings—and your family’s—in the simplest, healthiest imaginable way.
It’s perfect for anyone following a gluten-free diet, since there’s no wheat-filled crust. And it’s also ideal for low-carbers with nut allergies, since it doesn’t contain any nut- or almond-based crust: succulent, super-healthy zucchini does the job instead.
Last but not least, you can think of this as the healthiest-even deep-dish pizza (!), since you can add a really thick layer of toppings to the low-carb veggie crust.
Hint: You’ll find the video for the recipe under the recipe box.

When I was working on my Frozen Peanut Butter Cup experiments, I noticed that the combination of peanut butter and Sukrin syrup made a really thick dough when I mixed them for a half a minute.
So I wanted to make cookies out of the dough to see if they’d look — and taste — as perfect as the dough does.
Read about my experiments below: you’ll also find a recipe for the perfect (and super-easy) gluten-free, low-carb 2-ingredient peanut butter cookies! Yes, that’s correct; it takes just two ingredients and half a minute to mix and you’ve got a perfect dough! What else can you wish for?
