Paskha or pasha is something many people eat during Easter here in Finland regardless of their religion. We have even commercial — of course sugar-laden — versions of paskha. Originally paskha is enjoyed by Orthodox Christians on Easter and the dish originates from Russia.
Well, for some people Easter is not Easter without paskha, whereas some people cannot stand it. Finnish paskha differs from Russian paskha in the sense that Russian paskha has smooth texture and the ingredients are simpler. Actually I didn’t know this difference before I did some googling and found this recipe for Russian paskha. I adapted my own sugar-free low-carb paskha version from that recipe.
Russian paskha is seasoned with just a hint of vanilla while the Finnish version is bursting with almonds, raisins, sultanas and lemon flavor.

Limoncello is famous Italian liqueur. As a typical liqueur it contains plenty of sugar and is thus not suitable for a very low-carb lifestyle. Therefore, I developed a quick, sugar-free low-carb “Limoncello”, which is used for seasoning this airy dessert mousse.
First, the grated, yellow lemon peel is steeped in vodka at least for overnight. The fluid is then carefully pressed through a strainer and added to a mixture of mascarpone and sweetener. The dessert is finally lightened with beaten egg whites, which round the flavors and make the texture as airy and fluffy mousse.
This adult-only dessert is great for any New Year’s Eve party. The whole family dessert can be made by substituting lemon juice for vodka.

There are constantly great new low-carb products coming to the market. Well, many of them are unhealthy and full of artificial, weird ingredients. The main purpose of these products is not to make you healthy — the main purpose is to take your money. However, sometimes you find great, quite natural products which give some variety to the healthy low-carb lifestyle.
After finding a powdered sweetener consisting of erythritol and stevia there is no way back. It is sweet without the bitter aftertaste of stevia and it has only very little of the cooling effect of erythritol. I tried the sweetener in cooking and baking, and found that it makes really nice marzipan. This great recipe I want to share with you, my dear readers, and wish you happy holidays! 🙂
